Roccatederighi (Gr) Quercia Grossa was born in 2012 thanks to Pierpaolo Bertolini, the young and experienced owner of the company, with past experience at large Tuscan companies such as Antinori. Quercia Grossa is not just a winery but it is a project of recovery of ancient vineyards in the area, treated as a garden where the rhythms are dictated by nature. Respect for nature, for the operator and for the final customer imposes the absence of pesticides and chemical fertilizers, and treatments are reduced to a minimum. Harvesting is done manually using small crates which are then used to select the best bunches. The work in the cellar is similar to that in the vineyard for care and respect. The amount of total So2 is very low, the fermentation occurs spontaneously through indigenous yeasts. Pierpaolo masterfully uses steel vats, large barrels and amphorae for an amazing result.
