Quercia Grossa was founded in 2012 thanks to Pierpaolo Bertolini, the young and experienced owner of the company, with past experience at large Tuscan companies such as Antinori.
Quercia Grossa is not just a winery but a project to restore the ancient vineyards of the area, treated as a garden where the rhythms are dictated by nature.
Respect for nature, for the operator and the end customer requires the absence of pesticides and chemical fertilisers, and treatments are kept to a minimum.
Harvesting is done manually using small crates to select the best grapes. The work in the cellar is similar to that in the vineyard in terms of care and respect. The amount of total So2 is very low, and fermentation takes place spontaneously using native yeasts.
Pierpaolo skilfully uses steel vats, large casks and amphorae for an amazing result.
