Coccaglio, Franciacorta Solo Uva was founded at the behest of Giovanni Arcari, and is a small winery that is part of the 'Terra, Uomo, Cielo' group. It is run by Andrea Rudelli and produces around 15,000 bottles per year, on the one and a half hectares of vines it owns, using the Solo Uva method. No exogenous sugars are added at any stage of the production process (prise de mousse, liqueur d'expedition), because the grapes are harvested when fully phenolically ripe, and re-fermentation in the bottle takes place with the sole use of must, previously frozen.
