Sylvaine Pataille
Marsannay, Burgundy Sylvian Pataille is a very good producer from the northern area of the Cote de Nuits, very close to Dijon, with natural methods and great respect for the fantastic terroir in which he is lucky enough to produce his wine. Even before being a vigneron, he is a great wine enthusiast and this passion of his led him to set up on his own in the late 1990s, with the firm conviction of giving other enthusiasts gems obtained from farming free of chemicals. His approach in the vineyard is in fact biodynamic, with a small use of sulphur and copper alongside the classic preparations. In order to keep the ecosystem of the vineyard as unaltered as possible, he makes use of his horse friends for any kind of field operation. In the cellar, fermentations are spontaneous using indigenous yeasts and with small additions of sulphur dioxide before bottling. His speciality are the parcellari vinifications in the lieu dit of his own domaine with which he makes sensational wines that are strongly rooted in the terroir.
