The grapes come from a vineyard about 30 years old on clay-limestone soil, the fermentation is spontaneous with native yeasts, the grapes macerate in steel before aging in oak barrels, without added sulphites
Great olfactory complexity, floral hints of withered rose and violet petals meet those of red fruit jam, especially cherry and red currant, then come hints of black pepper and cinnamon, the nose releases a lot of minerality and finally refreshing notes of undergrowth
The sip is truly fine and elegant, it is light, savory and fresh, the tannin is noble and the finish is very long

Pommard, Burgundy
Antoine Petitprez is a winemaker expert in biodynamics, and his grapes come from plots between Pommard and Puligny Montrachet, the soil is calcareous clay and the vines have an average age of 30 years.
Before trying his hand at wine production, Antoine wandered between California and Canada, between Burgundy and Languedoc Roussillon, where he was able to acquire the right experience to complement his degree in oenology.
