Champagne obtained from the blend of two black grapes, predominantly Pinot Noir, the aim is to obtain a gastronomic, vinous and powerful Champagne. 45% of the mass ferments in wood, the remainder in steel. It rests on the yeasts for 30 months. It is not dosed, the total sulfur content is very low and only 2600 bottles are produced

Family of Champagne producers for 4 generations, now at the helm is Jerome who has decidedly turned towards biodynamic viticulture. Jerome is curious and obsessive and prepares micro vinifications annually with the aim of understanding the characteristics of his plots even more deeply.
The company is located in the extreme west of the Marne Valley, 70 km from Paris, precisely in Crouttes Sur Marne and its neighboring municipalities.
Bourgeois Diaz consists of 7 hectares of vineyards of which 3.5 of Pinot Meunier, 2 of Pinot Noir and 1.5 of Chardonnay, plus a small plot of Pinot Blanc.
