The grapes come from an area characterized by white stones of Kimmeridgian origin and calcareous subsoil, fermentation occurs spontaneously in steel tanks, maceration for 4 days on the skins, then refined for 1 year in large barrels. Finally bottle
Pink and Violet, lots of red fruits, then also Kiwi and Apple, incredible minerality, herbaceous and marine notes
Beautiful drink, surprising for its unsuspected complexity, full and fresh, savory and with gentle, persistent tannins
Serving temperature 14°-16°
Minced red tuna
Unusual but very good
Apicerna Puglia
In the heart of the Gargano National Park, the first limestone center in the South.
Valentina Passalacqua has an absolutely organic approach to viticulture, having developed a great knowledge of the terroir in which her company is located.
Valentina, after several years of production, felt the need to isolate within her vineyards some plots characterized by exclusively calcareous soil of the Kimmeridgian type, hence the now famous Calcarius Project was born: wines mineral, genuine and uncompromising.
The company breeds native varieties which are the result of a historical-cultural contamination that has its roots in Magna Graecia: Nero di Troia, Bombino, Greco, Falanghina, Negramaro and Aleatico first and foremost.
The carefully non-interventionist approach to the cellar does the rest. What is indicated on all labels is the atomic number (20) and the atomic weight (40.08) of the chemical element calcium (Ca)
