Cerasuolo di Vittoria della Bastonaca is a red wine produced by Azienda Agricola Cos in Vittoria, Sicily, and obtained from Frappato and Nero d’Avola. The grapes come from rich red soils rich in limestone, after manual harvesting they are destemmed and left to ferment spontaneously with native yeasts. Subsequently the wine ages in Slavonian barrels for about two years, and is finally bottled with a homeopathic addition of sulfur dioxide. The Cerasuolo di Vittoria della Bastonaca is a beautiful gem that goes well with horse meat thanks to its depth and persistence. The tannin is docile and the drink is fresh and elegant, on the nose the first impact is of flowers and red fruits, then it opens up and leaves room for balsamic and spicy notes

They are Titta Cilia, Giusto Occhipinti, Cirino Strano and they gave birth to COS in 1980.
The three inherited (for rent) the old family cellar of Giuseppe Cilia, father of Titta and vineyard.
In these 30 years of experience they have revolutionized Cerasuolo di Vittoria.
They profess the Biodionic “faith” and minimal intervention in the vineyard.
Theirs is also very interesting with the Spanish amphorae purchased now, 20 years ago
