Cos Pithos Rosso 2021

Pithos Rosso is a red wine produced by Azienda Agricola Cos in Vittoria, Sicily, and obtained from pure Nero d’Avola. The grapes come from rich red lands rich in sand and limestone, after manual harvesting they are destemmed and left to ferment spontaneously with native yeasts in amphora, where they macerate for 8 months, subsequently the wine is bottled with a homeopathic addition of sulfur dioxide , and rests here for about 6 months. Pithos Rosso is a convivial wine perfect for a barbecue with friends, however it has a deep, decisive and complex soul, while the body is very light. The sour cherry, plum and cherry are intoxicating on the nose.

The grapes are Nero d’Avola di Vittoria planted in sandy-limestone soils, the harvest takes place between the end of September and the beginning of October, the characteristic of this wine is the maceration on the skins for at least 8 months entirely in amphora

Red flowers and fruits such as cherry and plum, mineral with balsamic notes and hints of sour cherry cake

Fresh but with low Ph and strong tannins, light but complex body, long and satisfying finish

Serving temperature 16°-18°

They are Titta Cilia, Giusto Occhipinti, Cirino Strano and they gave birth to COS in 1980.

The three inherited (for rent) the old family cellar of Giuseppe Cilia, father of Titta and vineyard.

In these 30 years of experience they have revolutionized Cerasuolo di Vittoria.

They profess the Biodionic “faith” and minimal intervention in the vineyard.

Theirs is also very interesting with the Spanish amphorae purchased now, 20 years ago
