An interesting history is that of Folle Noir, a vine born from the cross between Folle Blanche (originally from Jurancon) and Malbec. It comes from a half-hectare vineyard located on clay-limestone soils. It is vinified in steel, then ferments on the skins for about 3 weeks.

Cazottes was born as a distillery, famous throughout the world for the quality and purity of its products.
For distillation, only pears, plums and cherries from organic or biodynamic orchards are used, or native and unobtainable vines from Gascony, such as Mauzac Rosè.
The obsessive attention to quality and detail (do you know what it means to manually remove the stems one by one? And remove the seeds from inside the fruit? And take the petals of the elderflowers one by one?) has guaranteed Cazottes incredible successes and the presence in the largest two- and three-starred venues in France and England.
All these attentions are obviously also reserved for the production of wine, biodynamic in the vineyard and natural in the cellar, produced with native yeasts and spontaneous fermentation, with an eye always turned to the quantities of sulfur present which must always be in homeopathic quantities
