Philippe and Cecile are the third generation of winemakers at Domaine Valette, working organically since 1992.
Care of the land and respect for the vineyard are the company cornerstones, through which it is possible to obtain wines that truly reflect the terroir. In this context there is a particular look at the aeration of the soil which occurs through plowing or urbanization.
The harvest is carried out by hand in order to preserve the bunches, then the grapes are placed in baskets with a capacity of 15 kg each, so as not to burden the grapes.
In the cellar, fermentation occurs spontaneously through native yeasts, the pressed grapes are placed in large barrels, where they rest on the pomace for about two years, before being bottled, without the addition of sulphites or other chemical products.
The company’s Pouilly Fuisse is able to challenge the great Chablis thanks also to its great aging capacity
