Vincenzo Bianco 2020, Falanghina – Two Bottles
The grapes come from a predominantly clayey soil with a minimal sandy part, they are harvested by hand; subsequently half of them are destemmed and pressed, while the other half is vinified in steel with whole bunches. they are 50% destemmed in the press and vinified as a whole bunch with 5 days of maceration for the other half. The fermentations, alcoholic and malolactic, occur spontaneously, with minimal addition of sulfur pre-bottling. Bouquet of white flowers and apple, mineral with iodized returns and wild herbs. The grapes come from a predominantly clayey soil with a minimal sandy part, they are harvested by hand, subsequently 75% of the mass is destemmed and pressed, while the remaining 25% macerates on the whole bunch for 7 days. The alcoholic and malolactic fermentations take place spontaneously, with native yeasts, with minimal addition of pre-bottling sulphur. The Vaira farm is located close to green hills and the Adriatic Sea between Termoli and Vasto, here the 100 or more members produce wine, oil, cereals and cheeses.
We can define it as an immense living organism, the largest agricultural company in Molise and one of the largest biodynamic companies in Italy, with its over 500 hectares, all Demeter certified, 40 of which are dedicated to vines.
Here Falanghina, Trebbiano, Montepulciano, Sangiovese, Cabernet Sauvignon and Merlot are bred, under the supervision of Michele Lorenzetti, one of the most appreciated biodynamic consultants in Italy.
