Deidre and Caleb’s passion for Italy and its products becomes clear with this wine. It is in fact a dedication to Salvo Foti’s Vinu Jancu, white wine in Sicilian dialect. Incredibly low yields, just 10 hl/ha. The grapes, coming from a vineyard 100 meters above sea level near Lake Champlain, are pressed by foot. After 5 weeks of maceration on the skins in fiberglass tanks, the wine finishes its refinement in glass demijohns.
