The winemaking follows the dictates of biodynamics, i.e. spontaneous alcoholic and malolactic fermentation with indigenous yeasts , no stabilization, no clarification or filtration. 40-day film maceration in terracotta amphora, where it then ages for a few months

The choice to produce in a sustainable and biodynamic way has led the company to adopt a cultivation method that goes beyond the concept of the organic regime, as it renounces any chemical intervention in the vineyard.
The biodynamic practice places the soil at the center of the agricultural universe, and through the use of totally natural biodynamic preparations (dynamized with water) it is able to preserve the soil and make it fertile.
Palazzo Tronconi is ICEA and DEMETER certified
In the vineyard, ancient Arcesi vines are grown such as Lecinaro and Ulavoro nero, Pampanaro, Capolongo and the Maturano bianco, and other varieties such as Malvasia Puntinata, Moscato di Terracina and Syrah. They are cultivated in balance between heaven and earth according to the dictates of biodynamic agriculture.
The cellar extends over 1000 m2 and is located in the basement: winemaking room, barrique cellar, place for storing bottles and kitchen area. Here the Magic happens, all the wines are fermented spontaneously and refined in concrete tanks, terracotta amphorae or oak or acacia wood. The wine does not undergo any intervention, in fact clarification and filtration are banned.
The wines are bottled strictly following the phases of the moon.
