Vinification and aging in Qvevri (some bicentenary), fermentation takes place at room temperature, maceration is short. Then bottle with a minimal addition of Sulfur Dioxide
Floral and with lots of red fruits and aromatic herbs, full of minerality and hints of undergrowth
Pungent and structured, full-bodied and elegant, long and tasty

From the passion for Georgian culture, music and traditions of the painter Jhon Wurdeman and from the knowledge of the different territories of the farmer and winemaker Gela Patalishvili, Pheasant’s Tears was born.
John Wurdeman‘s project aims to enhance the culture and historical tradition of Georgian wine.
The wines are vinified and aged, as per tradition, in Qvevri (amphora).
