Pinot Noir Granite 2017 Domaine Achillèe

Pinot Noir Granite is a red wine produced by Domaine Achillèe in Scherwillerm, Alsace, and obtained from 100% Pinot Noir grapes, harvested manually. 96-hour macerations with spontaneous fermentation by indigenous yeasts, two-year refinement in non-first passage wood and steel. It is bottled without the addition of sulfur dioxide and does not require filtration or clarification. Pinot Noir Granite is complex on the nose with hints of dried florals and blackberries and blueberries, but also of plum, in jam, then come waves of minerals and dark spices, finally roasting. In the mouth it is full and enveloping, powerful and round, with a long and fine finish. We recommend pairing it with Tuscan pecorino cheese

Yves Dietrich and his sons Pierre and Jean have created a true microcosm, unique and contagious.

Yves is responsible for the vineyard, Jean takes care of the cellar and Pierre takes care of the commercial part.

In 1991 Yves decided to take over the family farm, which he converted to organic in 1999 before the big leap into the biodynamic world in 2003.

In 2017, a bioclimatic cellar was created inside the largest thatched building in Europe, shared with the Domaine Jean Paul Schmitt.

The company has 18 hectares and the wines are precise and direct, engaging and clear.
