Manual harvest then whole bunch semi-carbonic maceration in 350 and 800 liter wooden vats for two weeks. At the end of fermentation the grapes are then pressed with the feet and subsequently aged for about a year in 600 liter wooden barrels, with batonnage every month and a half. No sulphites are added during bottling.
Bouquet of roses and orchids, cherry and plum, black pepper and star anise, stony and bay scents, wet earth
Great drink, fresh and mineral, deep and intense, the tannin is top and the finish is long
Serving temperature 16°-20°
Fillet with green pepper
It excites us

Nemicicky, Moravia
A true pioneer of natural wine, first as a journalist (he worked as a senior editor at the Vinarsk Obzor magazine, one of the main ones in the Czech Republic) then as a producer, and he has been doing so for 25 years.
His company has 15 hectares, of which 5 are under vineyards, the rest are occupied by woods, from which he obtains the barrels he uses, and by animal breeding, including bees. His is a holistic vision.
