Alsace Riesling Hahnenberg is a white wine produced by Domaine Achillèe in Scherwillerm, Alsace, and obtained from pure Riesling grapes, harvested manually. These come from a plot on sandstone-rich soil in the Chatenois municipality, in the Coteaux du Haut-Koenigsbourg denomination, the fermentation is long – 12 months – and spontaneous with indigenous yeasts, followed by the wine it ages for 22 months in steel before bottling, without filtration or clarification and just a pinch of sulfur dioxide. Alsace Riesling Hahnenberg releases citrus scents of blood orange and lime, peach and apricot, then turns towards liquorice and balsamic lilies. In the mouth it is voluminous and balanced, fresh and tasty, with great aging potential. Try it with scallops

The grapes come from a sandstone vineyard in the commune of Chatenois, in the Coteaux du Haut-Koenigsbourg appellation. For 8 years, treatments based on essential oils to limit the use of copper. The fermentation continues slowly for about 12 months over a total of 22 passages in steel on the fine lees.
On the nose peach, apricot, licorice, blood orange and lemon, balsamic and mineral hints
A wine of great volume and balance, aromatic breadth and acidity, with important persistence and the prospect of great longevity, at least 20 years.

Yves Dietrich and his sons Pierre and Jean have created a true microcosm, unique and contagious.
Yves is responsible for the vineyard, Jean takes care of the cellar and Pierre takes care of the commercial part.
In 1991 Yves decided to take over the family farm, which he converted to organic in 1999 before the big leap into the biodynamic world in 2003.
In 2017, a bioclimatic cellar was created inside the largest thatched building in Europe, shared with the Domaine Jean Paul Schmitt.
The company has 18 hectares and the wines are precise and direct, engaging and clear.
