Franciacorta Brut is a sparkling wine produced by SoloUva in Coccaglio, in the province of Brescia, and obtained from pure Chardonnay grapes. These come precisely from the Adro vineyard, one and a half hectares trained using the Guyot system and planted in 1985. The base wine first ages on the yeasts for 24 months, then remains in the bottle for another 3-6 months. after disgorgement for further maturation. Coccaglio, Franciacorta

SoloUva was founded by Giovanni Arcari, and is a small winery that is part of the “Terra, Uomo, Cielo” group, and is run by Andrea Rudelli and produces around 15,000 bottles a year, in the hectare and a half of vineyards owned, using the Grape Only Method.

At no stage of the production process (second fermentation, liqueur d’expedition) are exogenous sugars added, because the grapes are harvested at full phenolic ripeness and refermentation in the bottle occurs with the sole use of previously frozen must.
