From a vineyard of only half a hectare planted in 1995, this Franciacorta ages on the yeasts for 24 months and another 6 after disgorgement.

SoloUva was founded by Giovanni Arcari, and is a small winery that is part of the “Terra, Uomo, Cielo” group, and is run by Andrea Rudelli and produces around 15,000 bottles a year, in the hectare and a half of vineyards owned, using the Grape Only Method.
At no stage of the production process (second fermentation, liqueur d’expedition) are exogenous sugars added, because the grapes are harvested at full phenolic ripeness and refermentation in the bottle occurs with the sole use of previously frozen must.
