SoloUva Open N.M.

Open Non Millesimato is a sparkling wine produced by SoloUva in the Oltrepò Pavese, and obtained from pure Pinot Noir grapes. We are in Borgo Priolo, in the province of Pavia, 4 hectares of company hectares, with adult vines trained using the Guyot system and exposure to the South, South-West. The first fermentation takes place in steel where the wine rests on the yeasts for 20 months, then in the bottle without the addition of exogenous sugars. Open is a fresh and direct Franciacorta Method sparkling wine, tense and immediate, on the nose there are hints of strawberry and lemon, cinnamon and black pepper. Must try for an aperitif!

Coccaglio, Franciacorta

SoloUva was founded by Giovanni Arcari, and is a small winery that is part of the “Terra, Uomo, Cielo” group, and is run by Andrea Rudelli and produces around 15,000 bottles a year, in the hectare and a half of vineyards owned, using the Grape Only Method.

At no stage of the production process (second fermentation, liqueur d’expedition) are exogenous sugars added, because the grapes are harvested at full phenolic ripeness and refermentation in the bottle occurs with the sole use of previously frozen must.
