Obtained from grapes that come from the Goulburn Valley, north of the Yarra Valley. The grapes are completely destemmed, then the wine ferments on the skins for 2 weeks, and refines in 2000 liter barrels. Pinot Noir is vinified partially with carbonic maceration
The nose opens with red petaled flowers, then many red fruits such as cranberries, strawberries, cherries and raspberries. Undergrowth, herbaceous tones and wild puffs
Wine with a body that is not very full but warm, elegant and tasty to drink, the tannin is polite and the finish is pleasant and long
Serving temperature 16°-18°
Wagyu
It is a convivial wine, perfect for a dinner with friends
Yarra Valley (Australia)
Patrick SULLIVAN produces in a sustainable and respectful way, but does not like to conform to categories. He produces natural wine but doesn’t like this definition in The Dogmas.
In short, Patrick dreams of making wine in his own way.
The production area is Strezleki in Gippsland, a rural region of Victoria where Patrick and his wife Megan produce wines that reflect the fantastic Australian terroir
