The grapes ferment spontaneously and macerate for about 20 days with pumping over and punching down, then a year and a half in steel with batonnage and decanting, finally in the bottle with a small addition of sulfur dioxide

Homage to Don Franco, Mimmo’s father-in-law

Tenuta Macchiarola is a company managed by a pharmacist called Domenico, who is known to his friends as Mimmo, and who since 2007 has been producing the wines that his father-in-law Francesco, known as Franco, used to produce halfway between Manduria and Taranto. Of course, isn’t it?!
The reality is simple, Domenico has a great passion for wine and has decided to abandon his life as a pharmacist to become a wine craftsman, absolutely organic in the vineyard and natural in the cellar, except when the Apulian summers become scorching hot and at the risk of throwing away all the work of that year. Selected yeasts, filtrations or clarifications are not included in any way.
The production area is composed of red earth and clayey limestone soils, and hosts Negroamaro, Primitivo, Fiano and Verdeca farms, as well as olive groves and orchards.
Domenico likes to remember that the wines of Tenuta Macchiarola are frank, like the Apulian ones.
