Covolo is a red wine produced by Vignale di Cecilia in Baone in Veneto and obtained from Merlot and Cabernet Sauvignon grapes. The grapes come from volcanic and clayey soils, the fermentation is spontaneous with indigenous yeasts with a rapid maceration in vitrified concrete. The wine ages 50% in cement and 50% in second passage barriques. Covolo on the nose represents slightly vinous hints of violet and violet, with hints of red fruits; in the mouth it is fresh and generous with dense but delicate tannins. Perfect for grilled meat and if you are looking for a wine with a high quality-price ratio.
