The grapes are bred with the aim of a very low yield, in this case only 35 hl/ha, carbonic maceration with whole bunch fermentation. Elevated in barrique, the wine is then bottled without filtration and with a small addition of sulphur. Aromas of cranberry and herbaceous notes of cinnamon and dried leaves with cloves in the background, but what is surprising is the explosion of energy in the sip. A thrill to drink.

Explosion in the mouth but very easy to drink, the tannin is gentle, savory and with a long finish

Avallon (France) Vini Viti Vinci is a micro-store created by Nicolas Vauthier, one of the founders of the promotion of natural wines in France. Vauthier founded the aux Crieurs de Vin (wonderful wine bar in the center of Troyes) and remained at its head for about 10 years until he decided to leave its management to dedicate himself to the production of wine. The grapes are of exclusively organic or biodynamic origin and the winemaking takes place with as little intervention as possible.
