Fermentation in fiberglass with semi-carbonic maceration, maturation takes place in exhausted barriques for at least 9 months, then it is bottled with a small quantity of sulfur dioxide

Floral and fruity, mineral and balsamic notes, then memories of dark spices and liquorice

Full but lively, the tannin is velvety and the body is soft

Serving temperature 18°-20°

Vini Viti Vinci is a micro-store created by Nicolas Vauthier, one of the founders of the promotion of natural wines in France. Vauthier founded the aux Crieurs de Vin (wonderful wine bar in the center of Troyes) and remained at its head for about 10 years until he decided to leave the management to dedicate himself to the production of wine. The grapes are of exclusively organic or biodynamic origin and the winemaking takes place with as little intervention as possible.
