It is impossible to describe its type, whether red or orange, its appearance changes every year.
It is vinified as a whole bunch, the grapes macerate for a month, then the fermentation takes place in stainless steel and clay amphorae. Structured and enveloping with honeydew scent, enveloping on the tip of the tongue and tasty development, complex and complete taste.
Hints of apple and lime, flowers of various petals, mineral and almost spicy
Agile, savory sip. It is tasty and complex, long
Serving temperature 14°
Chopped red tuna with aromatic herbs
It is a wine that is impossible to describe with many words but it is easy to do so with one: Unique
Yarra Valley (Australia)
Patrick SULLIVAN produces in a sustainable and respectful way, but does not like to conform to categories. He produces natural wine but doesn’t like this definition in The Dogmas.
In short, Patrick dreams of making wine in his own way.
The production area is Strezleki in Gippsland, a rural region of Victoria where Patrick and his wife Megan produce wines that reflect the fantastic Australian terroir
