Olevano Romano, Lazio The Ciolli family has been producing wine for five generations, and does so in Olevano Romano, a few kilometres east of Rome, in a hilly area with volcanic soil. Ciolli has the merit of having brought a talented but sometimes unexpressed grape variety, Cesanese, to truly high levels of quality, through a natural and scarcely interventionist approach in the vineyard as well as in the cellar. The focus is entirely on safeguarding the aromatic characteristics of Cesanese and enhancing them!
