La buccia è però sottile è questo lo espone a marciume mentre la precocità maturativa lo espone a rischio di gelate; bisogna cogliere l’attimo perfetto per poterlo vendemmiare ma se accade regala prodotti di grande classe e variegati, visto che è molto adato sia alla vinificazione di vini fermi che di bollicine di eccezionale caratura.
