Bruno Schögel loves the farm he runs in Wolxheim, Alsace.
For more than 15 years, the way the vineyard is managed has allowed the wild fauna and flora to develop freely, always harvesting healthy, ripe grapes.
In the vineyard, very low doses of copper and sulphur; in the winery, interventions are reduced to a minimum, with only the minimum addition of sulphur when necessary.
