The Ancestral Method is the Father of sparkling wine, and it was until the middle of the nineteenth century.
It is a production method still widespread in France, where these wines take the name of Pet NatPetillant Naturel, and which is making a comeback in Italy, Austria and Spain.
This is a re-fermentation in the bottle with an ancestral method that involves very little human intervention and at most the addition of grape must; the grapes are gently pressed in order to stimulate the natural yeasts present on the skin and activate fermentation.
Then the fermentation is stopped by lowering the temperature of the bottled wine while waiting for the temperature to rise, without adding yeast or sugar.
The carona cork, unlike the Metodo Classico, remains in place, since disgorging is not foreseen, as do the residues on the bottom.
The result is a fresh, lightly sparkling, tasty and quick-drinking wine, suitable for any time of day.
