Champagne Les Terres Jaunes Pas Dosè is a Champagne produced by Aurèlien Lemaire in Boursault, a few kilometres from Epernay and made from pure Chardonnay grapes. The vendemmia occurs manually in the lieu ditThe grapes are then pressed immediately in barrique and demi-muid, no batonnage for the subsequent 11 months of maturation; it then spends 2 years on fine lees before disgorging in March 2023. It is neither dosed nor has sulphur dioxide added.. Obviously sensational paired with local Beursault cheese, it is clearly a very gastronomic Champagne for purists, with only 2000 bottles produced annually. On the palate, Champagne Les Terres Jaunes is fresh and savoury, elegant and assertive, very dry while the floral, peach and apricot notes stand out on the nose, followed by citrus and herbaceous notes

Aurèlien grew up in a maison with more than a century of history, learning most of the secrets of the trade from his father Claude.
From father to son in short, as is often the case in France.
Before embarking on a path intimately his own in his father's footsteps, however, Aurèlien has several experiences elsewhere, and the one in Georgia in particular will mark him deeply.
A visit to Sebastien Mouzon then definitely inspired a new approach in the vineyard and cellar. Natural and respectful of the environment.
And so it was that back home, his father Claude granted him two of the company's seven or so hectares, where they now produce Champagnes that we define as lively and energetic, with great character
