Trempette Champagne is a Champagne produced by Aurèlien Lemaire in Boursault, a few kilometres from Epernay and made from a blend of Pinot Noir, Meunier, Gris and Chardonnay. The first 3 grapes are pressed immediately and vinified in large barrels where they remain 11 months, while the Chardonnay spends similar time in Qvevri. Once reassembled, the wine matures 20 months on the lees in the bottle, no sulphur dioxide or draught is added, it is a pas dosè. Wonderful in combination with quality charcuterie, it is undoubtedly an unusual and original Champagne. Champagne Trempette has a citrusy and mineral, floral and herbaceous nose, on the palate it is fresh and savoury, elegant and persistent

🛁 Harvested by hand, the Chardonnay is vinified in Qvevri, the other grapes after direct pressing ferment spontaneously with maceration on the skins in large barrels for 11 months. Once assembled, the wine remains on the lees for a further 20 months, it is neither dosed nor has sulphur dioxide added.

Aurèlien grew up in a maison with more than a century of history, learning most of the secrets of the trade from his father Claude.
From father to son in short, as is often the case in France.
Before embarking on a path intimately his own in his father's footsteps, however, Aurèlien has several experiences elsewhere, and the one in Georgia in particular will mark him deeply.
A visit to Sebastien Mouzon then definitely inspired a new approach in the vineyard and cellar. Natural and respectful of the environment.
And so it was that back home, his father Claude granted him two of the company's seven or so hectares, where they now produce Champagnes that we define as lively and energetic, with great character
