Dimitrios and his daughter Stavroula are the owners of the winery: Dimitrios in the cellar and Stavroula in the vineyard. The idea is to create an agricultural organism integrated into the ecosystem that welcomes it. The work in the vineyard is all manual, the treatments are done with preparations of vegetable origin (nettle and yarrow are used among others), for nourishment compost and manure are used. "the true vine-dresser is nature, man is his assistant", Dimitrios repeats when talking about his way of making wine. It fits into a broader approach to things natural taken by the family over the
years, even before moving to the estate that is now Kamara Winery.
