🛁 The grapes come from a hilly terrain rich in clay, crushing is not carried out and so half of the whole de-stemmed grapes are placed in the press and the other half in the tank. Fermentation is spontaneous with indigenous yeasts in closed stainless steel tanks with 20% whole berries without temperature control. Maceration for 10 days without punching down, after racking it matures 8 months in stainless steel, then bottled without filtration or clarification and with a homeopathic dose of added sulphites
👃🏻 On the nose, delicate hints of fresh flowers with nuances of candied orange, tea leaf and typical Mediterranean herbs, mineral memories, then saffron and marzipan
👅 On the palate it is fresh and enveloping, full and mineral, savoury and long
