🛁 The grapes come from a hilly terrain rich in clay, crushing is not carried out and so the whole de-stemmed grapes are placed in the press. Fermentation is spontaneous with native yeasts in exhausted barriques without temperature control. Maceration lasts 5 days with two full punching-downs, followed by racking and ageing for 6 months in steel and 6 months in 54-litre demijohns, then bottling without filtration or clarification and with a homeopathic dose of added sulphites.
