🛁 The grapes come from a hilly terrain rich in clay, crushing is not carried out and so the whole de-stemmed grapes are placed in the press. Fermentation is spontaneous with indigenous yeasts in closed stainless steel tanks with no temperature control and whole cluster 10%. Maceration lasts 10 days, followed by racking and refinement for 6 months in stainless steel, then bottling without filtration or clarification and with a homeopathic dose of added sulphites.
