3C stands for trois cépages, a blend of the winery's different terroirs with a 24-month prise de mousse. Undosed and produced in 15,000 bottles per year. Fragrant, white flowers and fresh fruit, mineral and spicy overtones. Taut and exuberant, full-bodied and mineral, with a long finish.
Champagne BD'3CC Collection Brut Nature, Pinot Meunier 60%, Pinot Noir 30%, Chardonnay 10%
It is the evolution of BD'3C, which is more unbalanced towards the white characteristics of Chardonnay. Trois Cépages Collection is a vintage cuvee made from the three queen grapes, choosing the best barrels for maturation. Aged for 60 months on the lees, unmetered. 5000 bottles produced. Great fragrance of bread crust, white flowers and fruit tending towards the exotic, very mineral and with spicy returns. Fresh and still sharp mouthfeel, bewitching body, elegant as a tailor-made evening dress with great volume and length
BD'B Champagne, Chardonnay 100%
Blanc de Blancs produced with grapes coming from the micro-plot Le Temple, extreme west of the appellation in Nanteuil sur Marne, characterised by a chalky terroir that allows the Chardonnay to express itself in an incredible way. It is fermented and partially matured in neutral wood, then left on the lees for 24/30 months.. Delicately floral, then lots of fruit, especially apricot and peach, with a gravelly minerality, moderately spicy, with fragrant tones and liquorice. Elegant and graceful, with a subtle acidity that makes every sip a joy. Playful and very persistent
BD'M ChampagnePinot Meunier 100% - Two Bottles
Made from only 60-year-old Pinot Meunier vines on clay soil, this is perhaps Bourgeois-Diaz's most representative cuvée. The wine ferments and matures in steel and neutral casks. It stays on the lees for 24/30, is not dosed and only 4,000 bottles are produced. Nose with fruity and citrusy scents, especially Bergamot, then Violet, enhanced by mineral notes and fragrant memories of baking. Exuberant and rustic, gritty, full-bodied and very long.
BD'RS ChampagnePinot Meunier 100%
Made from grapes from two very old Meunier plots, 1935 and 1964, on clay soils. The 30% of nectar is pressed in neutral barrels, the remainder is made in steel. Maceration takes 20/24 hours, ageing takes 24/30 months. Not dosed, 15 mg/l of total SO2 and only 2000 bottles per year produced. Very interesting and rich nose, floral and slightly citrusy, Bergamot and Grapefruit, then Rhubarb, Thyme and other herbs. Fresh and slightly vinous, rustic and wild, generous and with a very long finish.

A family of Champagne producers for 4 generations, Jerome is now at the helm and has turned decisively towards biodynamic viticulture. Jerome is curious and maniacal and annually prepares micro winemaking with the aim of understanding even more deeply the characteristics of his plots.
The company is located in the extreme west of the Marne Valley, 70 km from Paris, precisely in Crouttes Sur Marne and its surrounding communes.
Bourgeois Diaz consists of 7 hectares of vines, 3.5 of which are Pinot Meunier, 2 of Pinot Noir and 1.5 of Chardonnay, plus a small plot of Pinot Blanc.
