Bombigiana is a white wine produced by Valentina Passalacqua's Progetto Calcarius in Apicerna in Apulia and made from Bombino grapes; spontaneous fermentation with indigenous yeasts and 5-day maceration in steel, then in demijohns for ageing! Bombigiana is a fun wine and ideal in combination with vegetable-based first courses or with pesto. On the nose, honey and bergamot, floral notes stand out, while on the palate it is fresh and savoury, even elegant.
