Bosquet is an ancestral method produced by Cati Ribot's Ve d'Avior in Santa Margalida, in the North East of Mallorca. Cati is one of the most famous natural wine producers in Spain, the third generation of the Galmes i Ribot family. Bosquet is made from Escursac and Fegoneu grapes that ferment in steel and then pass into the bottle before the sugars are completely transformed into alcohol and carbon dioxide. Neither clarified nor filtered. Strawberry and raspberry fresh and candied on the nose with floral flavours in the mouth is fresh and refreshing, an aperitif!

Santa Margalida, Mallorca

Cati Ribot is known throughout Spain as the most famous producer of natural bottled refermented wines. She grew up in Mallorca, the third generation of winemakers in the Galmes i Ribot family of Santa Margalida, in the North East of the island, working side by side with her father Jaume since 2004.

The epiphany came in 2008 when, while working as a sommelier in Barcelona, he fell in love with wines that were very different from the Spanish production stereotypes.

The family business has been certified organic since 2012 but has turned decisively towards biodynamic thanks to the meeting with Joan Rubio, a legend in Penedes, and Cati's stubbornness.

In 2019, Cati Ribot realised her dream and inaugurated Ve d'Avior, a personal project aimed at rediscovering the winemaking flavours of Mallorca, through the island's indigenous grape varieties and minimal interventionism in the vineyard. Ve d'Avior in fact means Wine of Time Past, and all labelled wines share a low alcohol content and a low dosage of sulphur dioxide added pre-bottling.

In Mallorca, the summers are very long, hot and sunny, so the native grapes ripen late, and show great resistance to drought, with their typically large berries.

Escursac is Cati's favourite grape, the only one vinified in purity, and grown on no less than 6 hectares, 5 of which were added in 2020.

Cati Ribot is an example for all winegrowers in Mallorca, she believes in her land and gives all of herself to make it known to the world. Such love could only give rise to superlative wines
