The grapes come from vines between 5 and 12 years old, the harvest takes place between the end of October and the beginning of November, spontaneous fermentation in stainless steel, then maturation in old 500-litre Slavonian barrels for at least another year and finally at least 30 days in the bottle
Alfara Flavia 2021, Catarratto
The grapes come from about 15-year-old vines, the harvest takes place between the end of August and the beginning of September, spontaneous fermentation in steel with 3 days' maceration on the skins, then 2 months in the bottle

The grapes come from approximately 15-year-old vines, the harvest is carried out between the end of August and the beginning of September, spontaneous fermentation for 30 days in steel with indigenous yeasts, malolactic fermentation, one month in barrique and 2 months in bottle

The grapes come from 30-year-old vines harvested between October and November, macerate for 30 days and ferment spontaneously in steel for about two weeks. Ageing takes place for 12 years in Slavonian oak barrels and then in bottles for another year.

sulphite content, stems from a strong concern for the health of the planet and of every human and animal.
Sustainability for Flavia means minimising human intervention in the various stages of production, and for the company it has a dual function: to avoid reaching high production levels that can stress the plant and to produce genuine wines that embody the tradition of the land.
