🛁 The bunches of grapes are harvested at the end of September and placed in small crates, after which they are left in the drying loft until January. The grapes are then carefully destemmed and left to macerate for 8 months, then pressed and left to ferment until October. It matures one year in steel and is bottled without clarification, filtration or stabilisers.

This is the story of Denny Bini, a great craftsman of Lambrusco and Podere Cipolla.
In 2003, Denny decided to rent a few hectares of his grandfather's land, to prune rooted cuttings of local grapes and make wine from them in the garage of his house. A few years later Podere Cipolla was born thanks to the help of a friend of his who granted him his own cellar.
The farm now extends over 3 hectares on clay soil and is treated with organic seed, also in order to preserve the area's extraordinary biodiversity.
Podere Cipolla reflects the producer's love affair with his homeland, vinifying according to the local farming tradition, the winery's wines are rustic and direct, territorial and engaging.
The approach in the cellar could only be sincere, without filtration or clarification, without selected yeasts or stabilisers.
These wines are pearls that tell the story of Emilia Romagna, absolutely not to be missed.
