Sauvignon is one of the most famous and cultivated vines in the world, originating in Bordeaux and sublimating throughout the Loire, with a peak of absolute qualitative excellence in the areas of Sancerre and Pouilly Fumè; it gives life to wines with good aromatic qualities, medium body and not always suitable for very long ageing, with some magnificent exceptions.
It is also widely used in Italy, especially in Friuli and Alto Adige, but can be found everywhere, for example in South Africa, Australia and New Zealand, where it is less floral and more structured.
The nose is a riot of herbaceous and vegetal aromas, with the characteristic green pepper, but also nettle, tomato leaf, exotic fruit and a wide range of floral aromas are easily discernible on the nose; there are also unusual notes for a wine such as the very famous cat's urine.
It is a delicate grape variety in vinification, it prefers steel and often suffers from the cask even if most of its production takes place there. In the mouth it gives sensations of great freshness, discreet aromaticity and structure.
