Sury-en-Vaux, Sancerre Splendid winery in the heart of the AOC Sancerre covering 3 hectares of silica-rich vineyards that Sebastien Riffault inherited from his father and runs with his wife. The winery has been certified organic since 2007, but the approach in the vineyard is actually completely natural and the grapes are always harvested at full phenolic ripeness. In the cellar the fermentations, alcoholic and malolactic, are spontaneous and the wine is neither clarified nor filtered.
