Fleys (France) We are located in the tiny commune of Fleys, in the magical area of Chablis, North West Burgundy, and it is considered, along with the Cote de Beaune, the home of Chardonnay, which here manages to express itself at the highest level. This is the home of Domaine Colette Gros, an 18-hectare estate (6 of which fall under the Premier Cru Chablis classification) run by the Gautheron family, Chablis vignerons for five generations, with Alain firmly holding the reins of the estate, together with his wife and young scion Cyril. The approach to wine-growing takes place with full respect for the environment and biodiversity. Harvest after harvest, healthy, genuine, rich and concentrated grapes are harvested on time! In the cellar, a strict selection process is carried out before vinification, after which the grapes are destemmed, pressed and left to ferment in steel tanks at a controlled temperature. The wine remains on its lees for at least nine months, is then filtered and bottled.
