Saumur Clos du Moulin 2018 is a white wine produced by Thierry Germain of Domaine des Roches Neuves in Saumur in the Loire Valley. The Clos du Moulin adjoins the Clos Romans and both yield grapes that when expertly treated produce wines with great ageing potential. It is made from pure Chenin Blanc grapes that ferment spontaneously with indigenous yeasts and macerate for a couple of days. Ageing takes place in large wooden barrels for about 9 months. Exotic fruit and sweet spices on the nose, freshness and verticality on the palate. Top with buttered pork fillet in a bread crust

🛁 The Clos du Moulin borders the Clos Romans and the vines have an average age of 80 years. After a long and progressive pressing, the vinification with indigenous yeasts and without temperature control continues in wood for 9 months, without malolactic fermentation or batonnage.
👃🏻 Ripe exotic fruit and yellow flowers on the nose, then herbaceous notes and sweet spices, incredible minerality
On tasting, one immediately realises that this is a great wine, still very fresh, vertical and endowed with an uncommon elegance. Superb.

Domaine Des Roches Neuves was born thanks to the incredible tenacity and will of Thierry German who, originally from Bordeaux, moved to Saumur in the early 1990s where he met his mentor and spiritual father Charly Foucault of Clos Rougeard.
Thierry Germain was one of the 2.0 pioneers of the biodynamic movement in the whole area, and is now rightfully among the best biodynamic farms in France.
The Domaine offers many variations on the Saumur Champigny appellation, the main grape variety being Cabernet Franc, but beware, you could easily fall in love with an unusual wine made from Chenin Blanc, called l'Insolite, the house white.
