Saint-Aubin Premier Cru Les Murgiers Des Dents de Chien 2013Chardonnay
Another new vineyard of the domaine (0.35 ha) on the rocky side of Montrachet, with marl and iron red soil that give this wine a pleasant aromatic breadth supported by its mineral freshness. Vinification and maturation in barriques of third and fourth passage. It is neither filtered nor clarified, in the glass it is opaque straw yellow and smells of white flowers, green apple and candied orange. The liquid glides nimbly over the palate thanks to a remarkable dose of vibrant acidity.
Saint-Aubin Premier Cru Sur Le Sentier Du Clou 2013Chardonnay
New vineyard of the domaine. On this small parcel of 0.20 ha we find the soil type of Saint-Aubin Village. The full southern exposure of half the hill allows the expression of liveliness and aromatic richness. Vinification and maturation in barriques of third and fourth passage. Pressatura diretta del grappolo intero, poi in barrique, per svolgere dapprima le fermentazioni, alcolica e malolattica, ed affinare per oltre un anno sulle proprie fecce fini, in seconda battuta. Complesso l’olfatto con fiori bianchi di campo, poi frutta fresca come Mela Golden e Banana acerba, ancora Anice e Tè verde, Alloro ed alga Nori, sul finire minerale. Dominique Derain he's a bigwig from the Hautes Cotes de Beaune.
In 1988 he arrived as a cooper, now retired, and is considered a real Burgundy guru.
His consultations are in demand and expensive.
At the end of the 80's he bought the estate near Saint-Aubin, his idea of viticulture has always been biodynamics. Today he passed his property to Julien Altaber e Carole Schwabwhile continuing to participate in operations in the vineyard and in the cellar.
Dominique's wines are oxymorons in the bottle, coexisting with elegance and that sense of rusticity so dear to the wines of this area.
