Blossom Blanc is a white wine produced by Tom Lubbe's Matassa in Calce, Languedoc Roussillon, and made from Muscat d'Alexandre grapes from a 50-year-old parcel. Manual harvest and spontaneous fermentation with indigenous yeasts and 3-week whole cluster maceration. Matured for a few months then in the bottle, without filtration, clarification or addition of sulphur dioxide. Blossom Blanc is a riot of white flowers and fresh fruit, of toast and aromatic herbs; on the palate it is fresh and dynamic, round and persistent

It was 2002 and in a short time Tom has become a cult producer not only for the wonderful terroir of Lime.
Its wines are taut, nervous and mineral like the granite on which the old vines are planted, at the same time graceful and ethereal, like the wind that inevitably combs those wild hills.
