🛁 The grapes come from a variegated soil of schist, quartz and grey marl, fermentation is whole cluster for 40% of the mass, generally the rule is submerged cap for one month, then 20 months in barrels
👃🏻Pot pourri of blue and violet flowers, jammy red and black berries, mineral with hints of red pepper, black pepper and star anise
👅 Full and intense, practically salty and with velvety tannin, mineral and fresh, quite long
👍🏻 Serving temperature 18°-20°.

Yoshiaky Sato and his wife Kyoko met during their respective jobs for a Japanese banking group operating between Tokyo and London; they were both hired in 1998 but did not meet until many years later, in time to decide to fly to New Zealand together to make wine. They later graduated in agronomy and oenology in Christchurch and settled in Central Otago where they established their company, Sato Estate
