Vinaigrerie La Guinelle

Banyuls sur Mer, Languedoc Roussillon La Guinelle is unique in the world, it is in fact the only open-air vinegar factory in Europe and this makes its products unparalleled. The base wine is matured in drained barriques, so that contact with oxygen triggers the process that causes the wine to turn into vinegar, also thanks to acetic bacteria that naturally select themselves in relation to climatic and seasonal conditions. Technically, a veil forms on the surface that can be likened, at least initially, to flor. This happens more and more as the days go by, until the vinegar is separated and transferred into glass containers where it matures for many months before being bottled, without filtering. The hand that makes all this possible is that of Nathalie Lefort who creates these wonderful vinegars using the wine that is given to her by friendly producers, such as Fabrizio Iuli or Manuel Di Vecchi Staraz, just to name two that are in our catalogue. In just a few years, La Guinelle has become a cult vinegar house, and the story continues...
