Michel Chevrè
Courchamps, Saumur Michel Chevrè began his esclation in the wine world in 1992 when he started working as cellar manager at the Domaine des Roches Neuves of the famous Thierry Germain. Since 2007, he has owned a small plot of Chenin Blanc in Courchamps, under the Saumur AOC appellation. In 2009, he began making wine using Germain's cellar, thus creating Clos de l'Ecotard. Chevrè's wine production is characterised by a non-interventionist approach in the vineyard and the use of indigenous yeasts in the cellar for spontaneous alcoholic fermentation in barrels.
